Ingredients:
- Wheat Flour: 500 grams (17.6 ounces)
- Chicken Egg: 1 piece (60 grams)
- Dry Yeast: 1 tablespoon (15 grams)
- Kefir (2.5% fat): 250 grams (8.8 ounces)
- Sugar: 10 tablespoons (150 grams)
- Butter: 1 tablespoon (20 grams)
- Refined Vegetable Oil: 5 tablespoons (80 grams)
- Salt: a pinch
- Poppy Seeds: 1 cup (150 grams)
Instructions:
Begin by preparing the necessary ingredients for the pie. Sift the flour, add yeast, 4 tablespoons of sugar, salt, and mix well. Incorporate the egg into the dry mixture, pour in the kefir, vegetable oil, and add the butter, then knead until you form elastic dough.
Place the dough in a bowl, cover with a towel, and let it rest in a warm place for 30 minutes. After this time, knead the dough again and let it rest for another 30 minutes.
While the dough is proofing, prepare the filling. Boil the poppy seeds in a small amount of water until they swell, then crush them slightly. Add 6 tablespoons of sugar and mix thoroughly. The filling is now ready.
Divide the prepared dough into two equal parts, as we will make two rolls from it. Roll out the dough into a thin layer, then spread half of the poppy seed filling evenly over the surface.
Roll up the dough into a log, trim the ends, and pinch them together to seal. Transfer the roll to parchment paper, then make incisions with scissors, forming petals. Make radial cuts every 1 cm, but do not cut through completely, leaving the petals attached.
Now, start shaping the pie by folding one petal inward and leaving the next two petals outside, turning them to the side.
Continue this process with the remaining petals, forming a decorative ring. Connect the previously cut ends together and place them in the center of the ring. Cover the pie with a towel and let it rise for 15-20 minutes.
Then, brush the pie with beaten egg yolk and bake at 200°C (392°F) for 20-25 minutes.
Once baked, remove the pie from the oven, cover it with a towel, and allow it to cool.
