For the Fruit Pilaf:
- 3 cups white rice (about 600 grams)
- 1 large pumpkin (about 5-6 kilograms or 11-13 pounds)
- 2 large apples
- 1 cup raisins (about 200 grams)
- 1 cup prunes (about 200 grams)
- 1 cup dried apricots (about 200 grams)
- 1 tablespoon sugar
- 5 tablespoons butter (about 75 grams)
- 2 tablespoons vegetable oil
- Salt to taste
Instructions:
- Carefully remove the top of the pumpkin, scoop out the seeds and pulp inside with a spoon. Make incisions on the flesh inside the pumpkin. Boil water and pour the boiling water inside, cover with the pumpkin top, and let the water cool completely.
- While the pumpkin is cooling, prepare the fruits. Cut apples into quarters, remove the cores, and then slice each quarter into smaller wedges. Rinse raisins, prunes, and dried apricots with warm water. Mix them in a bowl with the apples, add sugar, and mix thoroughly.
- Divide the rice into three approximately equal parts. Now, you can start layering inside the pumpkin. Begin with a layer of rice, followed by half of the fruit mixture, and repeat. The top layer should be rice.
- Salt and melt the butter, pour it into the pumpkin. Pour hot water over it, covering the top layer of rice.
- Brush the outside of the pumpkin with vegetable oil, cover it with foil, and let it bake for an hour and a half in a preheated oven at 180°C (356°F). After an hour, remove the foil, and cover the pumpkin with its top.
- Before serving, mix everything thoroughly and scrape the pumpkin flesh with a spoon. It’s a true delight!
