Ingredients:
- Black pepper, to taste
- Mayonnaise, 7 oz (200 grams)
- Pork loin, 17.6 oz (500 grams)
- Onion, 12.3 oz (350 grams)
- Salt, to taste
- Fresh herbs, to taste
- Cheese, 8.8 oz (250 grams)
Instructions:
Slice the meat into 1 cm thick slices, cutting against the grain.
Tenderize each slice on both sides, being careful not to tear the meat.
Flatten the slices until thin, then fold them in half to create an even shape.
Season each piece of meat evenly with salt and pepper. Allow to rest for 5 minutes to absorb the flavors.
Place the flattened meat on a baking sheet greased with butter.
Peel and thinly slice the onion into half rings. Arrange them densely on top of the meat.
Drizzle mayonnaise over the onions. Using a mayo packet with a small cut in the corner helps control the amount and prevents shifting of onions.
