How to Make Crispy Chicken Taquitos

  1. Preheat your oven to 375°F (190°C).

  2. Lightly coat the chicken breasts with some of the taco seasoning and bake until fully cooked, about 30 minutes or less depending on your oven.

  3. Shred the cooked chicken using a fork or food processor and set aside.

  4. In a large mixing bowl, combine the chopped green chiles, black beans, cilantro, fire-roasted tomatoes, shredded cheese, and the remaining taco seasoning. Mix thoroughly.

  5. Add the shredded chicken to the mixture and stir to combine. Set aside.

  6. In a small frying pan, heat about 1 inch (2.5 centimeters) of oil over medium heat.

  7. Using tongs, dip each tortilla into the hot oil for a few seconds on each side to soften. Transfer to a paper towel to absorb excess oil. Repeat for all tortillas.

  8. Place one softened tortilla on a paper towel. Add approximately 2 tablespoons (30 grams) of the chicken mixture across one edge of the tortilla, then gently roll it up tightly and place it seam-side down on an ungreased baking sheet.

  9. Repeat this process until all tortillas are filled and rolled. (You may have leftover filling, which can be frozen for later use.)

  10. Bake in the preheated oven for 10 to 12 minutes, depending on your preferred level of crispiness.

  11. Serve warm with sour cream, salsa, guacamole, or any of your favorite dipping sauces. Ground beef can also be substituted for chicken for a tasty variation.
