Chocolate-Vanilla Cookies

Ingredients:

  • Cocoa powder, 1 tbsp (20 grams)
  • Chicken egg, 1 pc (60 grams)
  • Salt, 1 gram
  • Baking powder, 2 grams
  • Vanilla extract, 1 tsp
  • Wheat flour, 190 grams (1 1/2 cups)
  • Butter, 120 grams (1/2 cup)
  • Chocolate, 60 grams (2 oz)
  • Sugar, 150 grams (3/4 cup)

Instructions:

Sift together the flour, baking powder, and salt.

Use a mixer to beat the butter with sugar until light and creamy. Add the egg and vanilla extract, mix until smooth. Add the flour mixture and quickly mix. Divide the dough in half.

Chop the chocolate into small pieces and melt it over a water bath, then let it cool slightly. Add cocoa powder to the melted chocolate and mix. Add the chocolate mixture to one half of the dough and quickly mix.

Roll out the dough between two sheets of parchment paper into rectangles, with the vanilla one slightly longer than the chocolate one.

Place the chocolate layer on top of the vanilla one and roll up the dough tightly along the long side.

Gently roll the log on the work surface. Wrap the roll in plastic wrap and refrigerate for 3 hours.

Preheat the oven to 175°C (350°F). Cut the dough into slices about 7–8 mm thick. Place on a parchment-lined baking sheet and bake for 9–11 minutes. Cool the finished cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
