- Garlic cloves: 2
- Carrots: 2

- Vegetable oil: 2 tbsp (30ml)
- Ground turmeric: 1.5 tsp (3g)
- Cashews: 100g (3.5 oz)
- Sugar: 1/2 tsp (2.5g)
- Coconut milk: 100ml (3.4 fl oz)
- Salt and ground hot chili pepper to taste
Instructions:
Prepare the Ingredients:
Place the frozen shrimp and green peas in separate colanders or sieves to thaw at room temperature.
Peel and wash the vegetables. Cut the carrots into small slices or matchsticks. Mince the garlic cloves. Dice the onion and ginger.
Cook the Vegetables:
Heat the oil in a large skillet. Add the onion, garlic, and ginger, and stir-fry over high heat with the turmeric and chili pepper.
Add the carrots, cashews, and sugar. Mix well and cook over low heat for 3 minutes.
Add Peas and Coconut Milk:
Add the green peas to the skillet. Pour in the coconut milk and stir. Bring to a boil and cook over medium heat for 5 minutes, stirring occasionally.
Add Shrimp:
Season the mixture with salt and add the shrimp. Cook for 4 minutes and then remove from heat. Cover the skillet and let it sit on the hot but turned-off stove. Serve immediately on individual plates.
