Chinese-Style Shrimp with Vegetables

Ingredients (Serves 2):

  • Frozen peeled shrimp: 150g (5.3 oz)
  • Frozen green peas: 100g (3.5 oz)
  • Onion: 1
  • Garlic cloves: 2
  • Carrots: 2
  • Fresh ginger root: 3 cm (1.2 inches)
  • Vegetable oil: 2 tbsp (30ml)
  • Ground turmeric: 1.5 tsp (3g)
  • Cashews: 100g (3.5 oz)
  • Sugar: 1/2 tsp (2.5g)
  • Coconut milk: 100ml (3.4 fl oz)
  • Salt and ground hot chili pepper to taste

Instructions:

Prepare the Ingredients:

Place the frozen shrimp and green peas in separate colanders or sieves to thaw at room temperature.

Peel and wash the vegetables. Cut the carrots into small slices or matchsticks. Mince the garlic cloves. Dice the onion and ginger.

Heat the oil in a large skillet. Add the onion, garlic, and ginger, and stir-fry over high heat with the turmeric and chili pepper.

Add the carrots, cashews, and sugar. Mix well and cook over low heat for 3 minutes.

Add the green peas to the skillet. Pour in the coconut milk and stir. Bring to a boil and cook over medium heat for 5 minutes, stirring occasionally.
