Ingredients for 4 Servings
- 600 ml (2.5 cups) chicken broth
- 300 g (10.5 oz) Chinese egg noodles
- 200 g (7 oz) imitation crab sticks
- 150 g (5.3 oz) any cooked meat or ham
- 100 g (3.5 oz) large spinach leaves
- 4–5 stalks green onion
- Soy sauce for serving
Directions
Slice the imitation crab sticks diagonally into 1-inch (2.5–3 cm) pieces. Thinly slice the cooked meat into very fine strips. Cut the green onions diagonally into 0.8-inch (2 cm) pieces.
Soak the noodles in a large amount of boiling water for 3–4 minutes, then drain and rinse under cold water.
Bring the broth to a boil, add the noodles, imitation crab, and cooked meat. Bring to a boil again.
Add the spinach and green onions, and cook for 1 minute.
Remove from heat and serve immediately with soy sauce.
