Ingredients:
For the Brownie Batter:
- A pinch of salt
- 100 grams (3.5 oz) dark chocolate
- 4 eggs
- 120 grams (1/2 cup) unsalted butter
- 150 grams (1 cup) all-purpose flour
- 1 teaspoon baking powder
- 150 grams (3/4 cup) sugar
- A pinch of vanilla powder
For the Filling:
- 300 grams (10.5 oz) cottage cheese (9% fat)
- 70 grams (1/3 cup) sugar
- 1 egg
- 400 grams (14 oz) cherries
Cooking Instructions:
Preparing the Brownie Batter:
- Break the chocolate into pieces. Melt it in a saucepan together with the butter over low heat. Be careful not to burn the chocolate.
- Beat 3 eggs and 80 grams (1/3 cup) of sugar with a mixer until fluffy. Add a pinch of salt and vanilla powder.
- Pour the melted and cooled chocolate into the beaten eggs and sugar mixture. Mix well. Then add the baking powder and flour to the mixture. Mix with the mixer on the lowest speed until combined.
Preparing the Filling:
- Mix the cottage cheese with 70 grams (1/3 cup) of sugar and 1 egg. Blend until smooth.
Assembling the Brownies:
- Spread 1/3 of the brownie batter evenly in a baking dish with high sides. Then spread half of the cottage cheese mixture on top. If the mixture is thick and does not spread easily, use a spatula to even it out. Distribute half of the cherries over the cottage cheese.
- Repeat the layers by pouring the remaining brownie batter, followed by the remaining cottage cheese mixture, and then the remaining cherries on top. Try to distribute the batter evenly (it may not be perfect, but that’s okay).
Baking the Brownies:
- Bake for 45 minutes in a preheated oven at 180°C (350°F). Check for doneness with a wooden stick—it should come out dry. Allow the brownies to cool completely in the baking dish.
