Cabbage Stuffed Pastry Rolls - A Must-Try Delight

Ingredients:

For the Filling:

  • Small Cabbage Head – 1
  • Shallot Onions – 2 small bulbs
  • Fresh Herbs (Parsley, Dill, Green Onions) – 1 bunch
  • Optional (for non-fasting version): 3-4 finely chopped boiled eggs
  • Salt and Pepper – to taste

For the Dough:

  • Wheat Flour – 2 cups
  • Vegetable Oil – 1/2 cup
  • Water – 1/2 cup
  • Salt and Pepper – to taste

Instructions:

Preparing the Filling:

Finely shred the cabbage, chop the shallot onions, and mince the fresh herbs. Sauté the cabbage in a separate pan, and in another pan, fry the shallot onions in vegetable oil until they turn golden brown.

Combine the sautéed cabbage, fried shallot onions, fresh herbs, and optionally, finely chopped boiled eggs. Season the filling with salt and pepper to taste. Allow it to cool.

Preparing the Dough:

In a bowl, combine 2 cups of wheat flour, 1/2 cup of vegetable oil, and 1/2 cup of water. Add a pinch of salt and, if desired, a little sugar. Knead the mixture into a soft, elastic dough that doesn’t stick to your hands. You may need to add a little more flour if necessary.

Divide the dough into 12-15 equal pieces.

Assembling the Rolls:

Take one piece of dough and roll it out as thin as possible, aiming for a transparent appearance. Place a portion of the filling at one end of the dough and begin rolling it up into a pastry roll. Repeat this process with the remaining dough and filling.

Brush the pastry rolls with strong tea (for fasting) or beaten egg (for the non-fasting version) for a golden finish.

Baking:

Place the pastry rolls on a baking sheet greased with vegetable oil and dusted with flour or lined with parchment paper if available. Bake them in an oven preheated to 180 degrees Celsius (356 degrees Fahrenheit) for 30-40 minutes, or until they turn golden brown.
