Ingredients for 4 Servings:
- 2 tbsp corn starch
- 1 2/3 cups (400 ml) vegetable oil
- 1/2 red bell pepper
- 1 tbsp soy sauce
- 1 carrot
- 1 egg
- 12 oz (350 g) pork fillet
- 1/2 green bell pepper
- 3 stalks green onion
- 1 tbsp rice wine or dry sherry
- 1/2 orange
For the Sauce:
- 1 tsp water
- 2/3 cup (150 ml) chicken broth
- 1 tbsp sugar
- 1 tbsp soy sauce
- 1 tsp corn starch
- 1 tbsp tomato paste
- 1 1/2 tbsp apple cider vinegar
Preparation:
Marinate the Pork:
Cut the pork into 1-inch (2.5 cm) cubes. Place in a bowl, add the wine and soy sauce, mix well, and let it sit for 20 minutes.
Prepare the Vegetables and Orange:
Peel the orange and segment it. Cut the bell peppers into 1-inch (2.5 cm) squares, removing the seeds. Peel and cube the carrot. Wash and cut the green onions into 1-inch (2.5 cm) pieces. Blanch the carrots in boiling water for 4 minutes and drain.
Batter the Pork:
Beat the egg with the corn starch until smooth. Remove the pork from the marinade and pat dry. Coat the pork pieces in the egg mixture.
Fry the Pork:
Heat the vegetable oil in a wok until very hot. Fry the pork pieces in batches, stirring frequently, for 4–5 minutes until golden brown. Drain on paper towels.
Prepare the Sauce:
In a saucepan, mix the chicken broth, soy sauce, apple cider vinegar, sugar, and tomato paste. Bring to a boil. Add the chopped vegetables and stir.
Thicken the Sauce:
Mix the corn starch with water and add to the sauce. Bring to a boil again. Reduce heat, add the fried pork and orange segments. Stir and heat through for 3 minutes.
