Zucchini pizza – my favorite guilt-free and delicious snack! Who says pizza can’t be both healthy and scrumptious? This recipe transforms the classic pizza into a zucchini-infused masterpiece, perfect for those craving a flavorful yet wholesome bite.
Ingredients:
- Chicken eggs – 3 pieces
- Cheese – 150 grams (about 1.5 cups shredded)
- Fresh herbs to taste
- Tomatoes – 3 medium-sized
- Zucchini – 500 grams (about 4 cups grated)
- Garlic – 3 cloves
- Wheat flour – 200 grams (about 1.5 cups)
- Dough conditioner – 1 teaspoon
- Salt to taste
- Spices to taste
Instructions:
- Grate zucchini using a coarse grater. Add salt and let it sit for about 10 minutes. Then, squeeze out 2/3 of the liquid.
- Mix eggs, flour, dough conditioner, minced garlic, grated zucchini, and finely chopped herbs. Season with salt and pepper to taste.
- Grease a baking dish with vegetable oil and spread the zucchini mixture evenly. Arrange tomato slices or whole tomatoes on top.
- Bake in a preheated oven at 180°C (about 350°F) for approximately 30 minutes.
- Sprinkle shredded cheese on top and return to the oven for an additional 10 minutes until the cheese is melted and golden.
