Ingredients (Serves 10):
- Cloves: 4 buds
- Small beets: 1 kg (2.2 lbs)
- Cinnamon stick: 1
- Sugar: 250g (1 1/4 cups)
- Salt: 1 tsp (5g)
- Wine vinegar: 1 liter (4.2 cups)
- Black peppercorns: 4
Instructions:
Prepare the Marinade:
In a large pot, combine the wine vinegar, salt, cinnamon stick, black peppercorns, cloves, and sugar.
Stirring occasionally, bring the mixture to a boil.
Cook the Beets:
Wash the beets thoroughly but do not peel them.
Place the beets in the boiling marinade and cook on low heat for 1 hour.
Remove from heat and let the beets cool in the marinade.
Prepare for Canning:
Once cooled, remove the beets from the marinade, peel them, and cut into cubes.
Pack the beet cubes into sterilized jars, leaving 2.5 cm (1 inch) of headspace.
