  • 1 1/2 cups plus 2 tablespoons all-purpose flour (200 g)

  • 1 teaspoon baking soda (5 g)

  • 1/4 teaspoon baking powder (1 g)

  • 1/2 teaspoon salt (3 g)

  • 1/2 teaspoon ground cinnamon (1 g)

  • 1/4 teaspoon ground cloves (0.5 g)

  • 1/4 teaspoon freshly grated nutmeg (0.5 g)

  • 1/4 teaspoon ground ginger (0.5 g)

  • 1/3 cup dried cranberries (Craisins) (50 g)

  • 1/3 cup coarsely chopped walnuts (40 g)

*Note: If you’re using defrosted pumpkin, you can use the separated liquid as part of the water measurement.


How to Make Spiced Pumpkin Cranberry Loaf

  1. Preheat your oven to 350°F (175°C). Grease the bottom of a loaf pan, approximately 9 x 5 inches (23 x 13 centimeters).

  2. In a large mixing bowl, beat together the oil and sugar until smooth. Add in the eggs, pumpkin purée, and water. Mix thoroughly.

  3. In a separate small bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and ginger.
