For the Cream Cheese Topping:

  • 2.1 oz (60 g) cream cheese
  • 1 tbsp (14 g) unsalted butter
  • 1.25 cups (160 g) confectioners’ sugar
  • 1/4 cup (60 ml) sour cream
  • 1/2 tsp (2.5 ml) vanilla extract
  • 1/2 cup (50 g) chopped walnuts

For the Carrot Base:

  • 6.3 oz (180 g) all-purpose flour
  • 1/2 tsp (2.5 g) baking soda
  • 1/2 tsp (2.5 g) baking powder
  • 1/4 tsp (1.25 g) salt
  • 1 tsp (2 g) ground cinnamon
  • 1/8 tsp (0.625 g) ground nutmeg
  • 1/2 cup (120 ml) vegetable oil
  • 1/4 cup (60 ml) thick apple sauce (or 1 stewed apple)
  • 2/3 cup (133 g) granulated sugar
  • 1/3 cup (67 g) brown sugar
  • 2 large eggs
  • 1 tsp (5 ml) vanilla extract
  • 1.3 cups (130 g) grated carrots

For the Cheesecake Filling:

  • 18 oz (500 g) cream cheese
  • 1/2 cup (120 ml) sour cream
  • 2 large eggs
  • 2/3 cup (133 g) granulated sugar
  • 2 tsp (5 g) all-purpose flour
  • 1 tsp (5 ml) vanilla extract

Cooking Instructions


  • Start by setting the cream cheese and eggs to reach room temperature. Preheat your oven to 350°F (175°C).

Make the Cheesecake Filling:

  • In a bowl, blend the cream cheese with flour and sugar using an electric mixer at low speed to minimize air incorporation. Add eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract.
