Ingredients for Southern-Style Pimento Mac and Cheese Bake

  • 8 oz uncooked elbow macaroni (225 g)

  • 1 can cream of mushroom soup

  • 1/2 cup milk (120 ml)

  • 1 cup mayonnaise (240 ml) — do not use Miracle Whip

  • 3 tablespoons butter, melted (45 ml)

  • 1 large jar (or 2 small jars) diced pimentos, undrained — don’t be afraid of the pimentos, they add subtle, delicious flavor!

  • 3 tablespoons finely chopped onion (about 30 g) — dried onion can be used in a pinch

  • Salt to taste and a generous amount of black pepper

  • 8–16 oz sharp cheddar cheese, grated (225–450 g) — reserve 1/2 for the top if not using crackers

  • 2 cups Ritz cracker crumbs (about 150 g) — optional but highly recommended for a golden, buttery topping

How to Make Southern-Style Pimento Mac and Cheese Bake

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Cook the elbow macaroni according to the package instructions, then drain and set aside.

  2. In a large mixing bowl, combine the cream of mushroom soup with 1/2 cup (120 ml) of milk. Stir until smooth.

  3. Reserve some grated cheddar for the topping. Add all remaining ingredients—except for the cooked macaroni, reserved cheese, and cracker crumbs—and mix thoroughly by hand.

  4. Fold in the cooked macaroni and gently stir until everything is evenly coated.

  5. Pour the mixture into a greased 9 x 13 inch (23 x 33 cm) casserole dish.

  6. Sprinkle the reserved grated cheese over the top of the casserole.

  7. If using, add an even layer of Ritz cracker crumbs on top for a crispy finish.

  8. Bake in the preheated oven for 25 to 35 minutes, or until the casserole is bubbly and the top is golden brown.
