Shanghai-Style Fried Rice

Ingredients for 4 Servings

  • 2 tbsp soy sauce
  • 3.5 oz (100 g) frozen green peas
  • 3 tbsp vegetable oil
  • 7 oz (200 g) crab meat
  • Pepper to taste
  • 5.3 oz (150 g) soybean sprouts
  • 7 oz (200 g) cooked smoked ham
  • 3 stalks green onion
  • 2 cloves garlic
  • 2 eggs
  • 1 cup basmati rice
  • 1 tbsp rice wine or dry sherry

Instructions

Cook the Rice:

Rinse the rice thoroughly. Place it in a pot with 3 cups of boiling water. Bring it back to a boil, reduce the heat, cover, and simmer for 20 minutes. Remove from heat, open the lid briefly to let the steam escape, then cover again and set aside.

Prepare the Ingredients:

Boil the peas for 3 minutes, then drain and rinse with cold water. Peel and finely chop the garlic. Wash, dry, and slice the green onions into rings. Shred the crab meat into fibers. Cut the ham into small cubes.

Cook the Garlic and Onions:

Heat 1 tbsp of oil in a skillet. Sauté the garlic and green onions for 30 seconds. Add the crab meat and cook on high heat, stirring constantly, for 1 minute. Remove from heat and set aside.

 

Prepare the Egg Mixture:

Whisk the eggs with soy sauce and rice wine.

Cook the Eggs and Ham:

Heat the remaining vegetable oil in a wok or large skillet. Add the ham cubes and pour in the egg mixture. Cook, stirring constantly, for 2 minutes.

Add the crab meat, peas, and soybean sprouts. Cook, stirring continuously, for 1 minute. Pour in the stock and cook for 2 more minutes.

Add the cooked rice to the skillet. Mix well and remove from heat. Season with pepper to taste. Transfer to a warm dish and serve immediately.
