- Eggplants (large) — 3 pcs.
- Bell peppers — 4 pcs.

- Processed cheese slices — 4 pcs.
- Garlic — 5 cloves
- Mayonnaise — 3-5 tbsp.
- Salt, ground black pepper
- Fresh herbs
Instructions:
- Begin with the eggplants – slice them into long, thin strips (lengthwise from the “nose” to the tail). Pan-fry the slices in vegetable oil until they turn tender.
- While the eggplant slices are cooking, preheat the oven to 150 degrees Celsius (302 degrees Fahrenheit). Rinse the bell peppers without peeling them. Place the peppers in the oven and bake until a dark crust forms on the skin. Flip them occasionally for even roasting. Once done, transfer the peppers into a plastic bag, seal it, and let them steam for 15 minutes. Afterward, peel off the skin, remove the stems, and dice the peppers.
- Wash and dice the tomatoes. Grate the processed cheese. Mix the grated cheese with garlic (minced with a garlic press) and add mayonnaise. Stir the mixture thoroughly.
- Assemble the terrine. The first layer consists of eggplants, arranged in the pan like sun rays or the petals of a chamomile flower – from the center outward in a circular pattern. Season with salt and pepper.
- Follow with a layer of the cheese mixture – use only half of it. Next is the layer of bell peppers. Once again, season with salt. Proceed to the tomato layer, add salt, and sprinkle chopped dill on top.
- Repeat the layers: eggplants, cheese mixture, bell peppers, tomatoes, and herbs. The final layer should be eggplants. Cover the pan with a flat plate, place something heavy on top, and refrigerate overnight.
