For the Crust:

  • Apples: 700 grams (25 oz)
  • Unsalted butter: 85 grams (3 oz)
  • Egg: 1
  • Sour cream: 1 tablespoon
  • All-purpose flour: 1.5 cups
  • Sugar: 1/4 cup
  • Baking powder: 3 teaspoons
  • Pinch of salt

For the Filling:

  • Apples: 700 grams (25 oz)
  • Unsalted butter: 1 tablespoon (plus extra)
  • Sugar: 200 grams (7 oz)
  • Cinnamon to taste

For the Custard:

  • Eggs: 2
  • Sour cream: 180 grams (6.3 oz)
  • Sugar: 100 grams (3.5 oz)
  • All-purpose flour: 2 tablespoons
  • Vanilla essence to taste

For the Crumb Topping:

  • Unsalted butter: 110 grams (4 oz)
  • Sugar: 1/2 cup
  • All-purpose flour: 1 + 1/4 cups
  • Baking powder: 3 teaspoons

Cooking Instructions:

Preparing the Crust:

  • Melt the butter and mix it with the egg, sour cream, sugar, and a pinch of salt. Then add the flour and baking powder mixture. Knead the dough until smooth.

Preparing the Filling:

  • Slice the apples thinly and cook them with sugar and a tablespoon of butter for about 7-10 minutes. Add cinnamon towards the end of cooking.

Making the Custard:

  • Beat the eggs, then add sour cream, sugar, flour, and vanilla essence. Mix well.

Creating the Crumb Topping:

  • Rub the soft butter with sugar, flour, and baking powder using your hands until crumbly.

Assembling the Pie:

  • Place the dough in a removable-bottom pie dish, forming the bottom and sides. Fill the crust with the cooked apple filling, then pour the custard over it. Sprinkle the crumb topping on top.

Baking the Pie:
