Ingredients:

  • Raw Beets – 3 pieces (about 300 grams or 10.5 ounces)
  • Onion – 1 bulb
  • Garlic – 3 cloves
  • Coriander Seeds – 1 teaspoon
  • Ground Red Pepper – 1/2 teaspoon
  • Vinegar – 1 to 1.5 tablespoons

Instructions:

Grate the raw beets using a grater, sprinkle with a pinch of salt, and add vinegar. Allow it to marinate for 2-3 hours, then drain the excess liquid.

In a pan, sauté the onion in vegetable oil until it reaches a dark golden color. Remove the onion from the pan; it won’t be needed further.

While still warm, pour this oil over the marinated beets. Immediately add finely chopped garlic (preferably pressed), red pepper, and crushed coriander seeds.

You can also add a tiny bit of sugar for a more vibrant flavor.
