Such a nutritious salad can safely replace dinner
- Red bell pepper 1/2 pc.
- Yellow bell pepper 1/2 pc.
- 10 black olives
- 10 olives
- Red onion 1 pc.
- Salami 50 gr.
- sun-dried tomatoes 2-3 units.
- cherry tomatoes
- Hard cheese 30 g
- handful of young spinach
- almonds 30 g
sauce (whisk everything)
- almond oil 1 tbsp.
- olive oil 2 tbsp.
- lime juice 3 tbsp.
- rosemary honey 1/2-1 tbsp.
- 1 tsp. mustard .
- salt / pepper .
Peppers can be taken either fresh or baked (without the skin), I took the baked ones, I think the salad will taste better with them.
Salami should be very dry, I cut it in thin slices (with a knife for peeling potatoes or asparagus).
Cut the cherry tomatoes in half, onion in half rings and pour boiling water over them.
Toast the almonds in a dry pan and cool.
Cut the sun-dried tomatoes into strips.
Spread everything (except the nuts) on spinach/salad leaves and pour the sauce over them, then refrigerate for half an hour.
Sprinkle with nuts before serving.
