Ingredients for 4 servings:
- Pumpkin – 1.1 lbs (500 g)
- Red lentils – 7 oz (200 g)
- Salt
- Fresh thyme – 4 sprigs
- Garlic – 2 cloves
- Vegetable oil – 2 tablespoons (30 ml)
- Onion – 1
- Water – 4.2 cups (1 liter)
Instructions:
Cook the Lentils:
Pour the lentils into a pot with boiling water. Bring to a boil, cover, and cook over medium heat for 10 minutes.
Prepare the Vegetables:
Peel and thinly slice the pumpkin. Peel and chop the onion and garlic. Wash and dry the thyme, then strip the leaves from the stems and discard the stems.
Heat the oil in a skillet and sauté the onion and garlic for about 4 minutes. Add the pumpkin and cook over medium heat, stirring occasionally, for 10 minutes. Add the thyme, stir, and immediately remove from heat.
Combine and Cook:
Add the sautéed vegetables to the pot with the lentils and mix well. Season with salt and pepper to taste. Cook for another 10 minutes.
