Ingredients:
- Chicken egg: 1 piece
- Salt: a pinch
- Baking powder: 1 tsp
- Wheat flour: 400 grams (14.1 oz)
- Butter: 150 grams (5.3 oz)
- Chicken egg (yolk): 2 pieces (60 grams or 2.1 oz)
- Black currant jam: 300 grams (10.6 oz)
- Sugar: 100 grams (3.5 oz)
Instructions:
Beat the egg with sugar and salt, gradually adding softened butter. Sift the flour with baking powder and knead the dough. Do not knead for long – just enough time to form a ball.
Divide the dough into two parts – a large ball and a small one. Wrap each in plastic wrap. Place the large one in the refrigerator for 1 hour, and the small one in the freezer.
Preheat the oven to 200°C (392°F). Roll out the large ball of dough to a thickness of 2-3 mm. You can roll it out directly on parchment paper. Spread jam over the dough. Take the small ball from the freezer and grate it evenly over the jam layer.
Bake for 15 minutes until golden brown. Let the cookie (or pie) cool, then slice into pieces and serve.
