Ingredients:
- Kefir (any fat content) – 150 ml (2/3 cup)
- Unsalted butter – 125 g (1/2 cup)
- Eggs – 2
- Granulated sugar – 200 g (1 cup)
- Baking soda – 0.5 teaspoon
- Flour – 1.5 cups (250 ml per cup)
- Fresh berries – 200 g
Instructions:
- Take the unsalted butter out of the refrigerator in advance to soften it at room temperature. If you haven’t done so in advance, you can soften the butter in the microwave.
- Add eggs, granulated sugar, and kefir to the softened butter. Mix well. Add baking soda and gradually add flour in small portions.
- Sort and rinse the berries, pat them dry, and add them to the batter. Mix well.
- Distribute the batter into small muffin cups, filling them not to the top, as muffins rise during baking.
- Bake in the oven at a temperature of 170-180 degrees Celsius (340-360 degrees Fahrenheit) for approximately 30 minutes. Check the readiness of the muffins with a wooden skewer or toothpick.
- Take them out of the oven, let them cool in the muffin cups for about 10 minutes, then remove them from the cups and serve.
