Ingredients for 4 Servings:
- Sugar: 2 tbsp
- Coarse Sea Salt: 2 tbsp
- Red Currants: 300 g (10.5 oz)
- Salmon Fillet: 500 g (1.1 lbs)
For the Sour Cream Sauce:
- Salt: To taste
- Butter: 1 tbsp
- Sour Cream: 250 g (8.8 oz)
- Ground Black Pepper: To taste
- Flour: 0.5 tbsp
Preparation:
Prepare the Salmon: Rinse the salmon fillet and pat dry with a paper towel. Sprinkle with salt. Wrap the fish in plastic wrap and refrigerate overnight.
Make the Currant Marinade: Wash the red currants, remove the berries from the stems, and blend until smooth. In a saucepan, combine 50 ml (1.7 fl oz) of water with the sugar and heat, stirring, until the sugar is fully dissolved. Remove from heat and mix with the currant puree.
Marinate the Salmon: Take the salmon out of the refrigerator, pat dry with paper towels, and coat generously with the currant marinade (the marinade layer should be about 1 cm/0.4 inches thick). Wrap the salmon in plastic wrap and refrigerate for another night.
Prepare the Sour Cream Sauce: In a skillet, melt the butter, add the flour, and cook, stirring constantly, for 3 minutes until golden. Remove from heat and gradually stir in the sour cream. Season with salt and pepper to taste.
Serve: Before serving, slice the salmon into thin slices and serve with the sour cream sauce.
