Zucchinis have been put to the test in countless ways in our kitchens – fried, oven-baked, grilled – you name it. There’s no end to the creative ways we can enjoy this delicious vegetable. Today, I want to share a fantastic recipe for zucchinis coated in breadcrumbs. This light dish is sure to be a hit with everyone. Give it a try and see for yourself!
Ingredients:
- Zucchini — 1 pc.
- Sour cream — 1 cup (240 ml)
- Mustard — 1 tbsp
- Onion — 1 pc.
- Vinegar — 2 tsp
- Honey — 2 tsp
- Bread crumbs — 0.5 cup
- Hard cheese — 100 g (about 1 cup)
- Salt — to taste
- Black pepper (ground) — to taste
Instructions:
Wash the zucchini and trim the edges.
Cut the zucchini in half, then slice each half into long, vertical sticks.
Chop the onion and sauté it in a pan until it becomes golden brown.
In a blender, combine the sautéed onion, honey, vinegar, mustard, salt, and pepper. Blend until you achieve a smooth mixture.
Add sour cream to the mixture and mix thoroughly.
In a separate bowl, combine bread crumbs, grated cheese, and pepper.
Dip the zucchini sticks into the sour cream mixture, then coat them in the breadcrumb mixture.
Place the coated sticks on a parchment-lined baking sheet.
Bake in a preheated oven at 170 degrees Celsius (340 degrees Fahrenheit) for 15–20 minutes or until the breadcrumbs turn golden brown.
Serve the zucchini sticks with your favorite sauce, perhaps the same sour cream mixture used during preparation.
