Ingredients for Crispy Fried Mac & Cheese Bites

  • 1 lb (450 g) elbow macaroni, cooked according to package directions

  • 2 Tbsp (30 g) unsalted butter

  • 2 Tbsp (15 g) all-purpose flour

  • 2 cups (480 ml) milk, warmed, plus 2 Tbsp (30 ml) for egg wash

  • 1 lb (450 g) grated smoked gouda cheese

  • 1 lb (450 g) grated sharp white cheddar cheese

  • Salt and black pepper, to taste

  • 2 eggs

  • 3 cups (180 g) seasoned Panko bread crumbs

  • Vegetable oil, for frying

  • Fresh marinara sauce, for dipping


How to Make Crispy Fried Mac & Cheese Bites

  1. Cook the macaroni following package instructions. Drain and rinse with cold water to stop cooking, then drain again and set aside. In a saucepan over medium heat, melt the butter. Sprinkle in the flour and whisk until combined. Cook for 2 minutes.

  2. Gradually whisk the warmed milk into the flour mixture, smoothing out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from heat, add both cheeses, and stir until fully melted and smooth. Season with salt and pepper.

  3. Fold the cheese sauce into the macaroni. Transfer to a shallow pan and refrigerate until cold, at least 2 hours.

  4. Shape the chilled macaroni and cheese into meatball-sized portions, placing them on a wax paper-lined tray. Freeze overnight.

  5. Whisk the eggs with 2 tablespoons (30 ml) of milk to make an egg wash. Dip each frozen ball into the egg wash, then roll in Panko bread crumbs to coat. Return the coated balls to the freezer until ready to fry.

  6. Heat oil in a deep fryer to 350°F (175°C). Fry the mac and cheese balls until golden brown and hot in the center, about 5 minutes. Serve immediately with marinara sauce for dipping.
