Instructions
Step 1
Prepare the ingredients for the soup. Wipe the mushrooms with a damp cloth and slice them thinly. Peel and chop the onion. Peel and wash the carrot, celery root, and potatoes.
Step 2
Cut the potatoes into small cubes and slice the celery root and carrot into thin strips. Wash and dry the green onion, dill, and basil. Slice the green onion into rings and chop the dill. Cut the basil leaves into thin strips.
Step 3
Heat the oil in a heavy-bottomed pot. Add the ground beef and sauté, stirring, until it changes color. Add the mushrooms and cook for another 5 minutes. Add all the prepared vegetables except the potatoes and sauté for another 5 minutes, stirring occasionally.
Step 4
Pour the broth into the pot and bring it to a boil. Add the potatoes and cook for 7 minutes. Stir in the processed cheese, allowing it to melt completely (this should take about five minutes).
Step 5
Season the soup with salt and pepper to taste. Add the dill and basil. Bring the soup to a boil and let it simmer for a couple of minutes. Serve hot.
Helpful Tip
For the best results, use processed cheese labeled “for soup” as it melts perfectly and gives the soup a creamy texture.
Additional Information
To enhance the aroma of the mushroom soup, add a teaspoon of ground dried porcini mushrooms along with the processed cheese. This will also elevate the flavor to a truly royal level. Enjoy this rich and comforting soup, perfect for any occasion!
