Ingredients for 6 Servings:
Peppers:
- 12 bell peppers (mixed colors)
- Vegetable oil for frying
Filling:
- 1.5 lbs (700 g) ground meat
- 5.3 oz (150 g) rice
- 4 sprigs parsley
- 4 sprigs dill
- 1 onion
- Ground black pepper
- Salt
Sauce:
- 4 sprigs parsley
- Salt
- 4 sprigs green onion
- 24 fl oz (700 ml) 20% cream
- Ground black pepper
- 2 tbsp tomato paste
- 4 sprigs dill
- 3 cloves garlic
Instructions:
Prepare the Peppers:
Cut off the tops of the bell peppers horizontally and carefully remove the seeds and membranes. Save the tops for later use.
Cook the Rice:
Rinse the rice thoroughly. Add to boiling salted water and cook until partially done, about 7 minutes. Drain and set aside.
Make the Filling:
Peel and chop the onion. Wash, dry, and finely chop the parsley and dill.
Sauté the onion in vegetable oil until golden, about 3 minutes. Add the chopped herbs and cook for another minute.
Combine the rice, ground meat, and sautéed onion with herbs. Season with salt and pepper.
Stuff the prepared bell peppers with the filling and cover with the saved tops. Place the peppers in a pot.
Prepare the Sauce:
Peel and finely chop the onion and garlic. Sauté in vegetable oil for 2 minutes.
Add tomato paste, followed by the cream. Season with salt and pepper. Cook the sauce on low heat for 7 minutes.
Add finely chopped parsley and dill. Mix well and remove from heat.
Cook the Peppers:
Pour the sauce over the stuffed peppers in the pot.
Cook on medium heat, covered, for 35 minutes. Allow the dish to cool slightly for about 10 minutes before serving.
Helpful Tip:
For the sauce, use heavy cream as it maintains stability when heated and enhances the dish’s appearance.
Fun Fact:
Stuffed bell peppers can be filled with various ingredients. Some prefer only vegetables (like carrots, onions, and tomatoes), others mix rice with chicken instead of ground meat.
