Ingredients for 4 Servings
- 200 g (7 oz) pork shoulder
- 100 g (3.5 oz) large raw shrimp
- 5–6 stalks green onion
- Salt
- Sugar
- Soy sauce for serving
For the Dough:
- 75 g (2.6 oz) flour
- 50 g (1.75 oz) potato starch
- 125 ml (1/2 cup) hot water
- 2 tbsp rendered pork fat
Directions
Prepare the Filling:
Peel the shrimp and devein by cutting along the back to remove the dark vein.
Grind the pork or finely chop it with a heavy knife.
Finely chop the green onions.
Mix the pork, shrimp, and green onions, adding salt, sugar, and soy sauce to taste.
Make the Dough:
Pour hot water over the flour and stir with a fork. Add the melted pork fat.
Transfer the dough to a board and knead, adding potato starch until smooth.
Roll the dough into a log and cut into 20 pieces. Roll each piece into a circle about 2–2.4 inches (5–6 cm) in diameter.
Assemble the Dim Sum:
Place a small amount of filling in the center of each dough circle.
Fold and pinch the edges to form pleats, leaving the corners slightly open.
Steam the Dim Sum:
Grease the steamer basket or line it with Chinese cabbage leaves.
Place the dim sum in the basket and steam over medium heat for 5–7 minutes.
Serve with soy sauce.
