Ingredients:
- 1 eggplant (300 grams / about 10 ounces)
- 2 tomatoes (200 grams / about 7 ounces)
- 70 grams (about 2.5 ounces) cheese
- 2 cloves of garlic (10 grams)
- Salt to taste
- Fresh herbs for garnish
Instructions:
Prepare all the necessary ingredients.
Peel the garlic cloves, rinse the eggplant and tomatoes.
Slice the eggplant into 8-10 mm thick rounds. Sprinkle the eggplant slices with salt, place them in a bowl, and let them sit for 30 minutes. Then rinse the eggplant slices and pat them dry. This step prevents bitterness in the final dish.
Arrange the eggplant slices on a parchment-lined baking sheet. Place a few small pieces of garlic on top of each eggplant slice.
Place thin slices of tomato on top.
Grate the hard cheese using a coarse grater and sprinkle it over each eggplant slice with tomato. Bake in the oven for 30 minutes at 180°C (350°F).
