Apricot Yogurt Cookies

Cook Time: 1 hour

Ingredients for 20 Servings:

  • 1 cup of chopped dried apricots (1 cup / 150 g)
  • 1.5 cups of flour (1.5 cups / 180 g)
  • 1.5 teaspoons of baking powder (1.5 tsp / 7.5 g)
  • 1 teaspoon of ground cinnamon (1 tsp / 2.6 g)
  • 0.5 cups of quick oats (0.5 cups / 45 g)
  • 0.5 cups of brown sugar (0.5 cups / 100 g)
  • 1 tablespoon of sliced almonds (1 tbsp / 7 g)
  • 60-70 ml of cherry or strawberry yogurt with 2.5% fat (60-70 ml / 2-2.4 fl oz)
  • 3 tablespoons of vegetable oil, plus extra for greasing the baking sheet (3 tbsp / 45 ml)

Cooking Instructions:

Prepare the Apricots:

  1. Chop the dried apricots into very small pieces. If the apricots are too dry, soak them in warm boiled water for 15-20 minutes, then drain and let them dry.

Mix Dry Ingredients:

  1. Sift the flour with baking powder and cinnamon into a large bowl.
  2. Add the oats, brown sugar, chopped apricots, and sliced almonds. Mix well.

Combine Wet Ingredients:

  1. Beat the yogurt with the vegetable oil until smooth.
  2. Pour the yogurt mixture into the dry ingredients and knead into a firm dough.

Shape the Cookies:

  1. Divide the dough into 20 equal parts and roll them into small balls.
  2. Preheat the oven to 190°C (375°F).
  3. Grease a baking sheet with vegetable oil.
  4. Place the dough balls on the baking sheet and flatten them into evenly sized cookies using a fork.

Bake the Cookies:

  1. Sprinkle the cookies with some extra sugar.
  2. Bake in the preheated oven for 20 minutes.
  3. Let the cookies cool on the baking sheet before transferring them to a wire rack.
