Zucchini Appetizer with Herbs and Honey

Ingredients:

  • Young zucchini — 500 g (approximately 1.1 lbs)
  • Salt — 1.5 teaspoons

For the Marinade:

  • Sunflower oil — 70 g (about 1/3 cup)
  • 9% vinegar — 2 tablespoons
  • Honey — 2 tablespoons
  • Garlic — 5-6 cloves
  • Ground black pepper
  • Fresh herbs (dill and parsley were used in this recipe)

Zucchini Appetizer with Herbs and Honey

Instructions:

  • Wash the zucchini and peel them if desired (for young zucchini, peeling is optional).
  • Slice the zucchini into thin strips using a vegetable peeler.

For the Marinade:

  • Finely chop the garlic and mix it with sunflower oil, honey, vinegar, pepper, and finely chopped herbs. Ensure a thorough mix.
  • Drain any liquid that accumulates from the zucchini, and further squeeze out excess moisture using your hands.
  • Pour the marinade over the zucchini strips and mix well to coat them evenly.
  • Place the zucchini in the refrigerator for 2-3 hours to allow the flavors to meld.
