Ingredients (for 20 servings)

  • Cottage Cheese: 400g (14.1 oz)
  • Unsalted Butter: 50g (1.8 oz)
  • Eggs: 4
  • Sugar: 2 tbsp
  • Vanilla Sugar: 1 tsp
  • Salt: A pinch
  • Lemon: 1/2
  • All-Purpose Flour: 250g (8.8 oz)
  • Vegetable Oil (for frying): At least 1 liter (33.8 fl oz)
  • Powdered Sugar (for dusting): To taste

Instructions

  1. Prepare the cottage cheese for the donuts. Grate it twice through a fine sieve into a small bowl. Alternatively, blend it using a blender with a special attachment for a lighter texture.
  2. Cut the unsalted butter into cubes and melt it in a small saucepan over low heat. Let it cool to room temperature.
  3. In a separate bowl, beat the eggs with regular sugar, vanilla sugar, and a pinch of salt until the mixture is fluffy and homogeneous. Add the cottage cheese along with the melted butter and mix well.
  4. Zest the lemon half using a fine grater. Squeeze the juice. Add both the zest and juice to the cottage cheese mixture. Thoroughly combine using a spatula.
  5. Gradually add the sifted flour to the cottage cheese mixture, kneading until you have a smooth dough. Let it rest at room temperature for 10 minutes. Meanwhile, pour vegetable oil into a saucepan and heat it thoroughly.
  6. Shape the dough into small patties or balls. Fry them in batches in the hot oil until golden brown. Flip the cottage cheese donuts to fry the other side. Once done, transfer them to paper towels to absorb any excess oil.
