Ingredients:
For the Quick Pickled Eggplants:
- Eggplants – 1.5 kg (3.3 lbs)
- Bell peppers – 3 pieces
- Hot chili pepper – 1 piece
- Onions – 2 pieces
- Garlic – 1 head
- Bunch of greens
For the Marinade:
- Water – 750 ml (3.17 cups)
- 9% Vinegar – 5 tbsp
- Salt – 1.5 tbsp
- Sunflower oil – 4-5 tbsp
- Bay leaves – 2 pieces
- Ground coriander – 0.5 tsp
- Black peppercorns – 8-10 pieces
Instructions:
- Start by preparing the marinade. In a pot, combine water, salt, coriander, peppercorns, and bay leaves. Bring the mixture to a boil and simmer for 2-3 minutes after boiling. Turn off the heat and add vinegar.
- While the marinade is cooking, place the whole eggplants into another pot. Boil them for exactly 5 minutes, then drain and let them cool.
- Cut sweet peppers into strips, and onions into half-rings. Finely chop the hot chili pepper, and either mince the garlic or use a garlic press.
- Mix all the vegetables together.
- Slice the slightly cooled, boiled eggplants into rounds.
- Take a suitable container for pickling and layer the vegetables and eggplant slices. Start with the vegetable mix at the bottom, then add eggplants, alternating layers.
- Pour sunflower oil on top, compact the layers, and then pour the prepared marinade over them.
- Place the pickled eggplants in the refrigerator for 4-5 hours. The longer they marinate, the more flavorful they become. After 24 hours, these pickled eggplants will be an absolute bomb of taste!
