Ingredients (Serves 4):
- Sugar: 4 tbsp (50g)
- Ready-made puff pastry: 250g (9 oz)
- Vanilla sugar: 1 tsp (5g)
- Flour: for dusting
- Thyme: 1 sprig
- Butter: 50g (3.5 tbsp)
- Zest and juice of 1 orange
- Peaches: 4
Instructions:
Prepare the Peaches: Wash the peaches, cut them in half, and remove the pits.
Make the Caramel: In a 20 cm (8-inch) metal pan or skillet, melt the butter with the sugar over low heat, shaking the pan occasionally to distribute the mixture evenly. Once the syrup turns golden brown, remove from heat.
Add the Peaches: Place the peach halves in the pan, cut side down. Sprinkle with vanilla sugar, thyme leaves, and orange zest. Drizzle with orange juice.
Cook the Peaches: Return the pan to medium heat and cook for 10 minutes, shaking the pan occasionally.
Prepare the Pastry: On a floured surface, roll out the puff pastry into a 23 cm (9-inch) circle. Place the pastry over the peaches, tucking the edges inside the pan.
Bake: Preheat the oven to 200°C (400°F). Bake the tart for 30 minutes until the pastry is golden brown.
Serve: Remove from the oven and let it stand for 10 minutes. Carefully invert the tart onto a serving plate.
