Ingredients:
- Zucchini – 2 pieces
- Tomato – 2 pieces
- Low-fat Cottage Cheese – 150 g (about 5.3 oz)
- Bell Pepper – 1 piece
- Dill – 30 g (about 1.1 oz)
- Garlic – 5 g
- Olive Oil – 10 g (about 2 tsp)
- Fine Sea Salt – to taste
- Cheese – 50 g (we used mozzarella)
Instructions:
- Grease the baking dish with olive oil and arrange a layer of thinly sliced zucchini.
- On top, place a layer of finely julienned bell pepper. Then, add a layer of cheese.
- For the cheese layer, mix cottage cheese, chopped dill (or any other herbs), and garlic, either minced or pressed through a garlic press. Then layer with zucchini, tomato, bell pepper, and the cheese mixture.
- The final layer should consist of zucchini. Sprinkle grated mozzarella on top.
- Bake at 180°C (356°F) for 25-30 minutes.
