Ingredients (Serves 4):
- Fish mince: 600g (21 oz)
- Egg: 1 large
- White bread: 250g (8.8 oz)
- Light cream (12%): 200ml (7 fl oz)
- Heavy cream (35%): 150ml (5 fl oz)
- Egg yolks: 4 large
- Tarragon leaves: 4-5
- Handful of pine nuts
- Salt: to taste
Instructions:
Prepare the Bread: Trim the crust off the white bread and soak the crumb in the light cream (200ml / 7 fl oz).
Chop the Tarragon: Finely chop the tarragon leaves.
Mix the Ingredients: In a large bowl, combine the fish mince, whole egg, chopped tarragon, and soaked bread. Season with salt and pepper, mixing thoroughly.
Shape the Sformato: Grease four small baking molds with butter. Divide the fish mixture among the molds, making a small indentation on top of each with a spoon. Place an egg yolk into each indentation.
Cover the Yolks: Cover the yolks with the remaining fish mixture, smoothing the tops.
Bake: Preheat the oven to 200°C (392°F). Place the molds in the oven and bake for 20 minutes.
Whip the Cream: While the sformato is baking, whip the heavy cream (150ml / 5 fl oz) into stiff peaks.
Serve: Once baked, carefully remove the sformato from the molds and place them on serving plates. Top each with a tablespoon or two of whipped cream and sprinkle with pine nuts.
