Ingredients:

  • 2 large eggplants (aubergines)
  • 2 tomatoes
  • 3 cloves of garlic
  • Parmesan cheese
  • Vegetable oil
  • Salt
  • Pepper

Instructions:

  1. Wash the eggplants and cut them in half. Grease a baking sheet with oil, drizzle the eggplants with oil, and sprinkle with salt. Bake at 200°C (392°F) for 15 minutes.
  2. Dice the tomatoes, add 3 cloves of minced garlic, salt, a dash of Parmesan cheese, and pepper.
  3. Scoop out the centers of the eggplants with a spoon, chop them, and mix with the tomatoes. Fill the eggplants with the mixture and sprinkle with cheese.
