Ingredients:
- Plums: 1500 grams (3.3 pounds)
- Sugar: 1000 grams (2.2 pounds)
- Lemons: 2 pieces
Instructions:
Wash and pit the plums. Place them in a saucepan and add a splash of water. Adjust the water quantity based on the plums’ juiciness—more for drier plums and less for juicier ones. Cook the plums until they are soft and partially cooked.
Process the plums into a smooth puree using an immersion blender. Add sugar to the plum puree and place the saucepan back on the heat. Simmer the mixture until the sugar completely dissolves.
Wash and dry the lemons. Grate the lemon zest and squeeze out the juice. Add both the zest and juice to the plum puree.
Continue cooking the plum mixture over low heat, stirring constantly, for about 1-1.5 hours. The mixture should thicken significantly but be careful not to let it burn.
Pour the thick plum puree into a rectangular cake pan lined with parchment paper or plastic wrap. Let it cool, then refrigerate.
After about 24 hours, your plum fruit leather is ready to be enjoyed.
