Ingredients:
- Quick-acting dry yeast: 14 grams (0.5 ounces)
- Warm milk (55 degrees Celsius): 3/4 cup
- Citrus soda: 3/4 cup
- Butter (cubed): 100 grams (3.5 ounces)
- Large eggs: 4 pieces
- Sugar: 3/4 cup
- Salt: 1 teaspoon
- Flour: 5 3/4 – 6 1/2 cups
Instructions:
- In a large bowl, dissolve yeast in warm milk. In a saucepan, pour citrus soda and add cubed butter. Heat over medium heat until the temperature reaches 55-65 degrees Celsius (130-150 degrees Fahrenheit). Add milk mixture with yeast, eggs, sugar, salt, and 2 cups of flour. Stir well. Add enough flour to make a soft dough.
- Turn dough onto a floured surface and knead for 6-8 minutes, until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about an hour, or until doubled in size.
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Punch down the risen dough, place it on a floured surface, and divide it into 4 equal parts. Divide each part into 9 pieces, shape into balls, and place them on a greased baking sheet. Cover with a towel and let rise in a warm place for 45-50 minutes.
- Place the baking sheet with risen dough balls in the preheated oven and bake the yeast rolls for 18-20 minutes, or until golden brown. Transfer the finished rolls to a wire rack and let cool at room temperature.
