How to Make Fluffy Banana Muffins with Creamy Peanut Butter Filling

  1. Preheat oven to 350°F (175°C). Sift together flour, baking powder, baking soda, and salt in a mixing bowl. Set aside.

  2. In a separate large bowl, cream the butter. Add sugar, vanilla, eggs, and milk. Beat until smooth and well combined.

  3. Mash the bananas in another bowl and stir them into the wet mixture.

  4. Gradually add the dry ingredients to the banana mixture, mixing gently until just combined—do not overmix.

  5. Line a muffin tin with paper cupcake liners. Fill each cup almost to the top. This recipe makes about 12 large muffins.

  6. Bake for approximately 20 minutes, or until a toothpick inserted in the center comes out clean.

  7. Allow muffins to cool completely before filling.

  8. For the peanut butter cream, beat peanut butter, cream cheese, and vanilla until smooth.

  9. Add confectioners’ sugar and beat again until fully incorporated and fluffy.

  10. Gently fold in the Cool Whip until the mixture is smooth and airy.

  11. Using a piping bag, inject the filling into the center of each muffin.

  12. Optionally, frost the tops with the remaining peanut butter cream for an extra indulgent treat.
