Bright, fresh flavors combined with succulent juicy chicken thighs and crispy potatoes makes for a tasty dinner the whole family will enjoy.

About 10 minutes of prep is all you need and the Greek chicken marinade can even be made in advance!

Greek Chicken Ingredients
You’ll notice a lot of common Greek seasonings in this ingredients list. You can always add a few more of your favorite spices if you like.

  • dried dill
  • kosher salt

Greek Chicken Marinade
The flavor for this Greek chicken recipe comes from the simple Greek chicken marinade that takes about 2 minutes to pull together. It’s made with the following ingredients:

  • olive oil
  • lemon juice
  • dried oregano
  • garlic powder
  • dried dill
  • salt and pepper

Simply whisk the ingredients together and use to flavor the potatoes and chicken.

I don’t usually have time to marinate the chicken but if you do, you can marinate the thighs for up to 2 hours.

How To Make This Sheet Pan Dinner
This easy dinner recipe takes less than 10 minutes to prep and about 40 minutes to roast in the oven. Once you’ve got the chicken in the oven, you’ll have plenty of time to prepare a nice green salad or green veggie dish to go along with it.

How To Make Greek Chicken

  • Preheat oven and prepare baking sheet.
    Preheat the oven to 400 degrees. Line a large, half sheet baking sheet with parchment paper or a silicone baking mat and set aside.
  • Prepare Greek marinade.
    In a medium bowl, whisk together the olive oil, seasonings and lemon juice until well combined. Add salt and pepper to taste.

  • Potatoes and Chicken
    Toss the diced potatoes in the marinade and transfer potatoes to the baking sheet. Pour the remaining marinade mixture over the chicken thighs and coat well. Place on baking sheet.

  • Top with lemon slices.
    Top each chicken thigh with a lemon slice.
  • Bake.
    Bake in the oven for 40 to 45 minutes (stirring halfway through), or until the internal temperature of the chicken is 165 degrees.
  • Garnish and enjoy!
    Garnish the chicken and potatoes with the chopped parsley. Serve with a lemon wedge, enjoy!

TIP: For crispier skin and potatoes, remove the lemons and broil for 2 to 5 minutes. Keep a close watch on the chicken so it doesn’t burn.

Can I use chicken breasts instead of chicken thighs?
Yes, chicken breasts can be substituted as well as drumsticks.

Can this recipe be made in advance?
The marinade can be made in advance. If you want to marinate the chicken, feel free to marinate for up to 2 hours in the Greek marinade before baking.

What other vegetables could I use?
If you don’t want potatoes, try asparagus, broccoli or even cauliflower.

Variations To Try
This chicken is delicious as is but here as some variations on this Greek chicken recipe:

  • add a bay leaf when baking for additional flavor
  • make with chicken breasts or drumsticks instead of chicken thighs
  • try other vegetables instead of potatoes – we love broccoli in this recipe!
  • let chicken marinate for up to 2 hours for more intense flavor

TIP: This Greek chicken marinade contains lemon so do not marinate the chicken for more than 2 hours or the chicken will begin to break down.

  • 6 to 8 bone-in chicken thighs about 2 pounds
  • 1 1/2 pounds baby red potatoes washed and halved as needed
  • 1/4 cup lemon juice fresh squeezed
  • 1/3 cup olive oil
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • 1 lemon thinly sliced
  • 2 tablespoons chopped parsley for garnish

Instructions

Preheat the oven to 400 degrees. Line a large, half sheet baking sheet with parchment paper or a silicone baking mat and set aside.

In a medium bowl, whisk together the olive oil, seasonings and lemon juice until well combined. Add salt and pepper to taste.

Toss the diced potatoes in about half of the dressing and transfer potatoes to the baking sheet.

Pour the remaining dressing mixture over the chicken thighs and toss to coat well.

Arrange the chicken on the baking sheet with the potatoes. Top chicken thighs with lemon slices.

Bake in the oven for 40 to 45 minutes (stirring halfway through), or until the internal temperature of the chicken is 165 degrees.

Garnish the chicken and potatoes with the chopped parsley.

Serve with a lemon wedge, enjoy!

Notes

For crispier potatoes and chicken, place under the broiler for several minutes. Keep a close on eye on it!
