When a friend brought this to a church supper, EVERYONE insisted on getting the recipe. Very moist and delicious.. This really is just about a do nothing cake, unless you count walking across the street to the neighbor’s to borrow sugar! LOL! So simple and delicious and MOIST! Now I must cut some to take to the neighbors before it is gone. I love the way the icing soaks into the cake and makes it so moist. I poked holes in the cake so it could soak in easier.
Ingredients:
- 2 cups sugar
- 2 cups flour
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 16 ounces crushed pineapple, undrained
Icing:
- 1/2 cup butter
- 1 cup sugar
- 3/4 cup evaporated milk
- 1 cup coconut
- 1 cup nuts
- 1 teaspoon vanilla
How to cook:
- Place first 6 ingredients in a bowl & mix until blended with spoon.
- Pour into 13×9 inch cake pan.
- Bake at 350°F 35-40 minutes.
- For Icing: Mix butter, sugar and evaporated milk together and cook over medium heat until a little thickened. (This usually takes about 5 minutes at a boil).
- Remove from heat and add remaining ingredients.
- Pour over hot cake.
In the icing is it powdered sugar or granulated sugar?
OMG is this ever good!!! No, not just good – FANTASTIC! I needed to bring a dessert to church and saw this recipe. It sounded too easy to be good so I made a trial one to make sure. Didn’t want to bring something that I wouldn’t be proud of. I didn’t need to worry – this cake is easy AND delicious! Five stars!!!
Just baked it and it is too sweet for my liking. Next time I will put only 1 cup sugar in the batter and less sugar in the icing. I made some holes in the cake before applying the icing so it soaked all the moisture from it. Other then the sugar it is very soft and nice to bring to friends, or eat all if it by yourself.

I made this cake using margarine instead of butter in the frosting. It was a bit soggy, but ok. Will use butter if I make it again. Thanks for recipe!
