Duck with Apples in Red Wine Sauce

Ingredients (Serves 8):

  • Duck: 1 (about 2 kg or 4.4 lbs)
  • Black pepper
  • Butter: 50g (3.5 tbsp)
  • Honey: 3 tsp
  • Dry red wine: 1 bottle (750ml)
  • Small apples: 1 kg (2.2 lbs)
  • Salt
  • Sugar

Instructions:

Prepare the Sauce:

In a saucepan, combine 200-300ml (3/4 – 1 1/4 cups) of red wine with the honey. Simmer over low heat until the liquid reduces by half, about 10 minutes.

Add the butter, stir until melted, and remove from heat. Season with salt and pepper to taste.

Prepare the Apples:

Wash the apples. Cut half of them into quarters and remove the cores. Place the apple quarters in a bowl and toss with half of the prepared sauce.

Prepare the Duck:

Wash and dry the duck, singe if necessary. Rub the skin with salt. Stuff the duck with the apple quarters. Secure the opening with wooden skewers.

Brush the duck with the remaining sauce.

Roast the Duck:

Place the duck breast side up on a roasting pan. Pour 50ml (1/4 cup) of water into the pan. Roast in a preheated oven at 200°C (390°F) for 1.5 hours.

Prepare the Remaining Apples:

Core the remaining apples with a small knife. Fill each apple with 1/2 tsp of sugar.

Finish Cooking:

Add the remaining red wine to the roasting pan with the duck. Place the prepared apples cut side up in the pan and roast for an additional 7-10 minutes.

Serve:

Transfer the cooked duck and apples to a serving platter. Cover with foil and let rest for 10 minutes.

Pour the pan juices into a saucepan, scraping up any browned bits. Bring to a boil over high heat to make a rich sauce.
