- Beef – 1 kg (2.2 lbs)
- Coarse sea salt – 100 grams (about 7 tablespoons)
- Sugar – 100 grams (about 1/2 cup)
- Vodka – 250 ml (about 1 cup)
- Black peppercorns – 1 tablespoon
- Vegetable oil – 3 tablespoons
- Bitter peppers – 2 pieces
- Garlic – 1 head
How to Prepare “Drunken Beef”:
- Begin by selecting a good, lean piece of beef without excess fat or veins.
- Take a loaf pan and a baking bag. Place the bag in the pan and add sugar, salt, black pepper, bitter peppers, chopped garlic, oil, and pour in the vodka. Shake the bag thoroughly to dissolve all ingredients as much as possible.
- Put the meat into the bag and tie it securely. Place it in the refrigerator for 3 days, turning the meat several times a day.
- Once the meat is ready, do not wash it, just blot it with a napkin.
- Leave it to air-dry for an additional period (a balcony or porch is suitable, but only if it’s not warm there).
- To air-dry the meat, place it in a cotton bag and hang it on the balcony. If the balcony is cool, let it hang there around the clock. If it’s warm during the day but cool at night, refrigerate it during the day and hang it on the balcony at night.
- The duration of drying is not limited; you can keep it on the balcony constantly, cutting off the needed portions for consumption. Alternatively, stick to the initial three-day drying in the refrigerator.
