Creamy Pear and Walnut Cheesecake

Ingredients:

  • Pears: 12 pieces
  • Chicken Egg (yolk): 1 piece, 1.1 oz (30 grams)
  • Chicken Egg: 1 piece, 2.1 oz (60 grams)
  • Unsalted Butter: 4.4 oz (125 grams)
  • Wheat Flour: 8.8 oz (250 grams)
  • Walnuts: 3.5 oz (100 grams)
  • Curd Cheese (9% fat): 3.5 oz (100 grams)
  • Cinnamon: 1 teaspoon
  • Baking Powder: 1 teaspoon
  • Vanilla Sugar: a pinch
  • Sugar: 3.5 oz (100 grams)

Instructions:

Prepare the dough: In a bowl, place very soft unsalted butter, curd cheese, sugar, vanilla sugar, and egg. Beat with a mixer (or simply mix with a spatula) until smooth.

Add sifted flour with baking powder to the butter-cheese mixture and knead the dough. You may need slightly more or less flour than indicated in the ingredients. The dough should be soft and elastic. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.

For the filling, peel and remove the seeds from the pears.

Remove the dough from the refrigerator, divide it into two equal parts. Roll out one part into a layer and place it in the baking dish (it’s recommended to grease the dish with unsalted butter and sprinkle with flour). Make punctures in the dough with a fork.

Place the pears on the dough with the holes facing up. Fill each hole with chopped walnuts. Sprinkle with cinnamon on top.

Roll out the second piece of dough into a layer and place it over the pears. Brush with egg yolk and bake in a preheated oven at 350°F (180°C) for about 35 minutes.

Once baked, cool the cheesecake and carefully remove it from the mold. Optionally, dust with powdered sugar. This cheesecake is very convenient to serve: you simply cut yourself a whole pear in the dough. And inside the pear, you’ll find walnuts!
