Chocolate Orange Mousse

Ingredients for 6 servings:

  • Dark chocolate – 7 oz (200 g)
  • Butter – 1 tablespoon (15 g)
  • Sugar – 2 tablespoons (25 g)
  • Grated zest of 1 orange
  • Orange juice – 1 tablespoon (15 ml)
  • Orange liqueur – 2 tablespoons (30 ml)
  • Large eggs – 4


Melt the Chocolate:

Place the butter, sugar, and broken pieces of chocolate in a heatproof bowl. Add 4 tablespoons of cold water. Set the bowl over a pot of boiling water and stir until the chocolate mixture is smooth. Let it cool slightly and then add the liqueur.

Prepare the Yolks:

Separate the egg yolks from the whites. Add two-thirds of the orange zest and the orange juice to the yolks. Mix this with the chocolate mixture.
