INGREDIENTS
For the pancakes:
- Cottage cheese – 500 g
- Egg yolks – 3
- Sugar – 50 g
- Flour (or semolina 2 tbsp + flour for dredging) – 50 g
- Salt
- Vanilla extract
For the sauce:
- Unsalted butter – 50 g
- Sour cream (20% fat) – 100 g
- Honey (or sugar) – 50 g
INSTRUCTIONS
I use cottage cheese with 5% fat content. It’s best not to use cottage cheese that is too high in fat as it may cause the pancakes to fall apart during frying. I always add egg yolks to my pancakes. You can adjust the amount of sugar to your taste, but remember that the sauce will also be sweet. You can also use semolina instead of flour (2 tbsp, soaked in water for 30 minutes). The amount of flour may vary depending on the consistency of the cottage cheese.
I combine cottage cheese, salt, sugar, vanilla extract, and egg yolks in a bowl and mash them together with a potato masher until smooth.
Then I add flour and mix well. I get a thick cottage cheese mixture that holds its shape and doesn’t flow.
I divide the mixture into 12 portions, shape them into rounds, and dredge them in flour. I use a knife to shape them into disks, rotating the pancake to create a pattern. I’m not sure how to explain it better, maybe everyone else already knows this technique except me 🙂
Now my pancakes are always even and beautiful, just like one another.

I fry the pancakes in vegetable oil until golden brown on both sides.
I transfer them to a deep dish and prepare the sauce.
I combine sour cream, honey, and unsalted butter in a saucepan and heat it up.
I heat the sauce until it’s smooth, but it doesn’t need to boil. If you used sugar instead of honey, heat it until the sugar crystals dissolve. The sauce is ready.
While the sauce is still warm, I pour it over the pancakes. And that’s how this simple yet incredibly delicious dish is made. They may look like ordinary pancakes, but with this sauce, they are simply HEAVENLY!!!
They taste great both warm and cold.
