It’s a dish that will remind you of your favorite dumplings, but quicker and more convenient to make! You can prepare it with any fresh berries; we’ve tried it with cherries, blackberries, and raspberries, and couldn’t decide which one is the most delicious. All of them were simply delightful! Ingredients:

  • Cottage cheese (5%) — 700 grams (about 3.5 cups)
  • Cherries — 400 grams (about 2.5 cups)
  • Chicken eggs — 3 pieces
  • Sour cream (20%) — 250 grams (about 1 cup)
  • Cane sugar — 250 grams (about 1.25 cups)
  • Lasagna noodles — 16 sheets

Prepare the necessary ingredients. You can use fresh or frozen berries; however, fresh and aromatic berries are preferred during the summer. For this recipe, we’ll focus on making lasagna with cherries. Wash the cherries and remove the pits. Opt for moist, soft, and pasty cottage cheese.

In a large bowl, thoroughly mix cottage cheese, sour cream, sugar, and eggs (you can even lightly beat them with a blender or whisk). Don’t skimp on sugar, especially if you’re using tart berries.

You can make lasagna noodles from scratch, but for a dacha version, it’s more convenient to use ready-made sheets. If required, pre-cook the lasagna sheets according to the instructions on the package. Some sheets, like the ones I used, may not need pre-cooking.

Preheat the oven to 190°C (375°F). Take a rectangular or square baking dish (I used a square one, 22x22x8cm, with a non-stick coating), lightly grease it with butter, and start assembling our lasagna. I used 4 sheets for each layer.

Spread approximately 5-6 tablespoons of the cottage cheese mixture onto the lasagna sheets. Evenly distribute a handful of berries. Ensure the sheets are fully covered with the cottage cheese mixture to prevent them from becoming dry and tough during baking. Repeat this layering process four times, with the top layer being the cottage cheese mixture and berries. Sprinkle sugar on top. Cover the dish with foil and bake in the preheated oven for 35-40 minutes.

Remove from the oven and let it cool before slicing. Now you can invite your family to enjoy this delicious and aromatic dessert!
