Asian-Style Duck Breast

Ingredients for 4 Servings

  • 1 pack of Teriyaki marinade or stir-fry Teriyaki sauce
  • 2 large duck breasts

Alternative Marinades:

  • 1 pack (120 g / 4.2 oz) Sweet and Sour stir-fry sauce
  • 1 pack (120 g / 4.2 oz) Peking Lemon stir-fry sauce
  • 1 pack (120 g / 4.2 oz) Oyster sauce with green onion stir-fry sauce

For the Garnish:

  • 1 pack of thin rice noodles
  • 1 small green chili pepper
  • 2 cm (0.8 in) fresh ginger root
  • 1 bunch cilantro
  • 1 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil

Instructions

Prepare the Duck:

  1. Rinse the duck breasts thoroughly. Make several deep diagonal cuts in a crosshatch pattern on the skin, cutting through the fat layer without reaching the meat.
  2. Place the duck breasts in a bowl, pour the marinade over them, and let them marinate for 1 hour or overnight, turning them several times.

Cook the Duck:

  1. Preheat the oven to 220°C (425°F).
  2. Place the duck breasts in a rimmed baking dish and roast for 20 minutes.

Prepare the Noodles:

  1. Cook the rice noodles according to the package instructions.
  2. Wash the chili pepper and slice it thinly, removing the seeds. Peel and finely chop the ginger root. Wash the cilantro, dry it, and separate the leaves.

Stir-Fry the Noodles:

  1. Heat 1 tbsp sesame oil in a wok. Stir-fry the chili pepper and ginger for 2 minutes. Add the noodles, soy sauce, and rice vinegar, and stir-fry for 3 minutes. Transfer to a serving dish.

Finish the Duck:

  1. Turn the duck breasts over and cook for another 20 minutes.
  2. Slice the duck breasts thinly and place them on the dish with the noodles. Drizzle with the sauce from the baking dish.
